Banana Bread & Granola bars

As some of you know… I {LOVE} to bake
~ most often I don’t even eat much of what I make. {weird? ya, I know!} 😉
Friday afternoon I baked up 2 loaves of banana bread along with a dozen mini muffins. {gave the muffins all away}
and as of Sunday morning this is all that’s left of the 2 loaves…

Banana Bread Recipe

1 c white sugar
1/2 c unsalted butter
2 eggs
1/4 c sour milk (i add about 1/2 t vinegar to sour the milk)
1 1/2 t baking powder
2-3 mashed ripe bananas
1/4 t salt
1/2 t baking soda
2 c whole wheat flour
1/2c nuts are optional
(chocolate chips or raisins are also optional)
Bake at 350*F for 45 min.
I grease the pans, and try to only fill them about 1/2 full at the most.
You can also make muffins if you wish. just adjust the baking time 🙂
This is my mother in law’s recipe – and I’m pretty sure it was her mom’s recipe.

I also made up a batch of homemade granola – maybe a week ago?
I made it with full intentions of making granola bars so last night while the hubs was watching LOTR again, I decided to make up the bars.

I did sort of use a recipe for the granola – of course I can’t find it right now,
and I know for SURE that I left out some ingredients and changed up some of the ingredients. (when I dig up the recipe I will add it to this post)

4 c of the homemade granola
1/2 c of honey
(I debated about using agave in lieu of the honey, but I already used it in the granola)
1/2 c cruchy peanut butter
1/2 c all bran
1/2 c chocolate chips
I mixed it all together, greased up my 9 x 12 glass pan and pressed it all in flat.
cooked for 20 min. at 350*F. I let it cool for 2 hours before cutting it up.

Unfortunately they aren’t “school safe” as they’re are laden with peanut butter and other healthy nuts.
The kids love ’em!

We are trying to get ourselves geared up to head to the dungeon basement. If you don’t see me for a day or two, it might not be a bad idea to send for help. it’s THAT bad.
Actually it’s WORSE! I’m going to take before and after pics.
I just keep thinking and focusing on HOW BADLY I want to get crafting again.
